Tofu Quiche

I fell in love. I have a new love affair with tofu and I have been busy trying to make a quiche/ tarte with tofu and my first try was very successful. I will post the recipe here in 2 weeks ( I promise) as I want to make it again. This quiche is a tofu based baked in a bain marie so it can have that custard like  appearance. It was finished off in the oven and it did not fall apart. I have been waiting for my copy of Vegan Brunch for a week now and the recipe I wanted to try so bad was the vegan quiche but alas no book so I had to make my own and wow am I happy with the results. I used  sweet spinach and oyster mushrooms and tomatoes and I used arrowroot and cornstarch to bind it. I used the famous black salt used by many bloggers recently to give the tofu a mild egg taste. I made a shortcrust pastry in advanced but I hope to try it with a more nutritious pastry. I adapted many recipes I saw on line from 101 cookbooks and  Fat Free Vegan and some from my husbands French Vegetarian cookbooks  which I will post the names shortly when I edit this post. For now enjoy the food porn and have a wonderful week.

    Tofu makes a wonderful quiche! I haven’t tried the Vegan Brunch one either, but I made one from the Uncheese Cookbook, and it was amazing! Yours looks lovely.

    You always make me so curious about these vegan creations of yours. Tofu quiche? Huh? Okay so I’ll just wait for the recipe. I just bought a bunch of pecans so I’ll be making my fav vegan breakfast soon. Also I thought of you last week when I saw soy gelato! There were two flavours Vanilla soy and Hazelnut soy gelato. I was out with the kids so I didn’t ask if they were vegan (egg free). The next time I visit that ice-cream shop I’ll be sure to ask….

      wb hope u had a good trip. Yes tofu makes an excellent quiche with a texture similar to custard made with eggs. The next day this was even better and very light and flavourful. Get informed tofu quiche is the best. Are the pecans for the dish Skinny Bitch in the Kitch?

        Thanks the holiday was really for the kids. I feel now that I need a vacation LOL. Yes, the pecans are for the skinny bitch recipe that I blogged about in the past. I had a sudden craving:-)

    my adaptions are like major that to be honest it is not even the same thing I will make it again soon and post the recipe. I mentioned those blogs as I looked at their recipe before coming up with my own. None of the ingredients I used or the quantities are the same but I gave those blogs props for inspiring me.

    I’m so hungry. Made “cheater” chickpea pastry thingies today…so not what I had longed for. I need a lentil patty. and a granburger roll. and a Bajan personal chef! sigh.
