Caribbean Vegan Errata

I never thought I would have had to make this page but yes my book has an error inside…sniff…

The error is on page 45 Sweet Potato Drop Biscuits and in the book it does not say where to add in the sweet potatoes and also  to mash them! Thanks Mr B.C for pointing this out.

The method should read

Cook the sweet potatoes in boiling salted water for about 20 minutes, until just tender.  Mash the sweet potatoes well and set aside in a bowl. Preheat oven to 400 F (200 C). Lightly grease a baking sheet.

Stir the flour, salt, baking soda, cinnamon, and cloves together. Add margarine and rub it into the flour with your fingertips or a pastry blender until the mixture has the texture of  coarse bread crumbs. Add the brown sugar, baking powder, non dairy milk and sweet potatoes and mix lightly until just combined.

    Thanks for this page, even if you hated putting it up, Taymer. I have the book but really haven’t had a chance to go through it yet, and I will tuck a note inside for this recipe. It’s funny, I have seen quite a few recipes for sweet potato biscuits recently and decided they have my name written all over them- ‘taters and biscuits being two of my favorite food groups!

      Carolyn I found 1 more error but it is not in the method it is a coversion I will put that up…i hope that is it
      Thanks for buying the book I really appreciate it.
      I made these biscuits for my North American readers because they love biscuits and using orange sweet potatoes and I was pleased with the results
